It is a little late but we have finally made some spring recipes for all of you food lovers out there. We have made up some light, tasty meals that are also easy to make!

The simple spinach salad:

This meal is about as healthy as it gets- including nuts, fruits AND vegetables! This simple dish is foolproof and gets the kids eating those dreaded greens. 

  • A large handful of spinach
  • A slice of goat’s cheese (warmed up, if preferred) 
  • Half a large sweet potato 
  • Half a medium butternut squash 
  • A sprinkle of walnuts
  • Two tablespoons of pomegranate seeds
  • A small pinch of salt 
  • A drizzle of olive oil

Some cheeky chicken chow:

A healthy alternative to Sunday lunch, this dish is perfect for a sunny day lounging in your backyard. You can also mix and match your sides, switch the potatoes for brown rice or the asparagus for brussels sprouts.  

  • Two pieces of grilled chicken breast
  • Four or five new potatoes
  • Several stalks of asparagus
  • A tablespoon of pine nuts
  • A couple cashews
  • A squeeze of lemon 
  • A small pinch of salt and pepper
  • A drizzle of olive oil

Nummy yummy meringue:

And lastly, what you all have been waiting for... the pudding! We decided to switch it up for this one (because you can't have too much dessert). We made both an avocado cheesecake and a fruit salad with some mini meringues.

  • Meringue (shop-bought is just fine if you don't have the time to make your own)
  • A whole lot of fruit 

The easy-peasy cheesecake: 

  • Mix an avocado and a table spoon and a half of cream cheese together until you get a smooth consistency  
  • Stir in a teaspoon of brown sugar
  • A squeeze of lemon
  • Grind up plain biscuits and butter mixed together (for the base)
